Chocolate Lover’s Class at Ralph’s Wine & Spirits

Ralph’s Wines and Spirits  is a gem of a local business offering libations, classes and tastings at their Hingham shop.  At Ralph’s, their guiding principle is that “wine, beer and cocktails are all better enjoyed when accompanied by great food!”  Their goal at Ralph’s “isn’t just to sell you our product, it is to educate you on it, taste you on it and hopefully introduce your palate to nothing it has ever experienced before!”

I was the lucky recipient of the gift of a Corks & Forks class at Ralph’s by my dear friend G. Along another sweet friend, D, we attended the Chocolate Lover’s Class,  conducted by Nicole Coady, owner of Fixx Chocolates and sommelier Ralph Herson.  Oh, did we have fun!

As Nicole was developing products for Fixx, her goal was to create unique and innovative chocolate. The result was “an assortment of unique, rich and superb creations that will elevate your candy bar experience. From peanut nougat and bacon to candied jalapenos, the Fixx experience will introduce you to intoxicating flavors that will reinvigorate your love of chocolate.”  Sounds good to me!

Many of the candy bar creations are named after Nicole’s family and friends. Incredibly, she makes and packages all of the chocolates herself.

You can find Fixx Chocolates in specialty and gourmet shops across Massachusetts as well as spots in Arizona, Texas, New York and Washington DC.  This is a company to watch (and sample) for certain!

During the class,  Nicole demonstrated how  to “temper” chocolate ~ a process that gives it a glossy sheen and crisp texture.

Ralph’s portion of the program explained to us the nuances of a dessert wine pairing with chocolate…
